recipe of the week: chicken wrapped in bacon (aka the ultimate potluck crowd-pleaser)

Chicken.
Bacon.
There's really nothing that can go wrong here.

This simple recipe is perfect for the next potluck dinner you get invited to, it's equal parts succulent and savoury. The biggest problem with chicken breast is how easily it dries out, thanks to the fatty bacon, that is no longer an issue. So, instead of whipping up your typical salad, try this. Your friends will love you, I promise.



Chicken Breast Wrapped in Bacon 

Here's what you'll need:

Chicken breast (obviously)
Bacon (also, obvious) (1 piece per piece of chicken)
Ground cayenne
Salt
Black pepper
Balsamic vinegar
Red onions (sliced)
Leeks (sliced)
Olive oil
Bread crumbs
BBQ sauce

METHOD:

Adjust for serving size, but I made food for five people.

Marinate 5 chicken breasts with cayenne, salt and pepper. I like to get handsy at this point to make sure every crevice is well-seasoned.

Preheat oven to 350 degrees Fahrenheit.

Wrap the marinated chicken in bacon. You should only need one piece per breast. This part is messy. don't be squeamish about it.

Place chicken in an oven-safe container, I prefer Pyrex glass or ceramic. Tuck a few pieces of red onion under the bacon of each chicken breast. 



Pour two caps full of balsamic over everything and then a little bit of olive oil. (Remember, bacon is fatty and produces it's own oils)

Cover and put in the oven for 20 min. Check on it. Put in for another 20 min.

Remove form the oven and remove any excess oil. I just put the chicken in a new container. 

Slather BBQ sauce ALL over EVERYTHING. (Not only does this give a slight smokey flavour but also a great deep brown colour.)



Sprinkle breadcrumbs and green onions over top. Place back in the oven for 5-10 min on lower heat, about 200 degrees. 

AND YOU'RE DONE.


I added grilled veggies, quickly sautéed with garlic, shallots and ginger as a side dish. Here's the table at the potluck I had last night with my lovely friends. Gotta love that 1.5 L wine bottle <3
